What better way to taste the nuances of a barrel then on a single varietal still cider with an apple that you are probably already familiar with!?!
Last season we got our hands on enough Lady in Pink apples to fill 3 different barrels with delicious juice! We picked some of our most interesting barrels to age this single varietal apple cider. The first barrel we filled was an ex-whiskey barrel that then held our apricot cider before making Lady in Pink Apricot Whiskey! Then we took a red wine barrel that had had some Marquette red wine we had freshly emptied and filled it with more Lady in Pink juice! Finally the last barrel we filled was an ex-zinfandel red wine barrel that had been used to make our 100% Montmorency Cherry wine!
