The Imperial Dolgo is a wild fermented cider made with a blend of foraged dolgo crabapples from around Asheville and a field blend of southern apple varieties from Morris Orchard.
About Dolgo Crabapples: Beautiful blossoms turn to tart crimson red fruit ripening over an extended period. Large for a crab apple the fruit is olive shaped, the flesh is red and the juice when pressed, runs pink. It has exceptionally high natural sugars for such a tart apple making dolgo a great addition to any cider. Dolgo crabs originate from Siberia and were brought to the US in the 1800’s.
